Ingredients:
Kale (ribs removed, torn into bite size pieces, massaged)
Apple (sliced)
Onion (sliced)
Walnuts (crumbled, toasted)
Manchego cheese (small pieces)
Ingredients for vinaigrette:
Extra virgin olive oil
Apple cider vinegar
Dijon mustard
Honey
Lemon juice
Method:
Yes, massage your kale. I know this sounds laughable but it truly makes a big difference in removing the harsh bitterness often associated with raw kale. Massaging your kale really just means to crush and squish it over and over again. Your hands are your best tools for this. Once the kale seems softer to you then it’s probably massaged enough. Kale is so hearty and fibrous, I don’t think you can really over massage it.
Whisk your vinaigrette. It’s approximately 3:1:1, olive oil: vinegar: mustard. Sweeten with honey to your liking. Add a squeeze of lemon juice and season with salt and pepper.
Toss all your salad ingredients together with the dressing. If you don’t have Manchego a nice Cheddar or smoked Gouda would work great.
